Speaking of aviation based films, have you (or anyone else) seen "Les Chevaliers du Diel"? Its basically a French version of Top Gun, but the aerial sequences are (in my humble opinion) some of the best ever commited to film.
Its a pain in the ass to get hold of (it was released under the title "Sky Fighters" in the US), but
well worth a watch if you get a chance.
