Depends what POV you want. You can get the curved/flat adhesive mounts which work reasonably well mounted on the dash, although the viewpoint isn't very good. They're quick release too, so you can easily clip it on once you've passed the marshalls at the 'ring. Suction cup mounts are good and work well mounted high up on the windscreen. Like SilverSurfer said, behind the rearview mirror gives a good POV without being too distracting. If you've got a roll cage then there are plenty of options for mounting to part of the cage too. There are lots of third party mounts available now too, so you don't have to necessarily stick to the GoPro brand, have a think about what angle you'd prefer then see what's out there.
When I was there last year, they wouldn't let me on the track until i'd removed my GoPro. Although I was on a bike, so it might be different for cars. Definately worth looking into though.
