Sounds like something is not right, check nothing is touching the wheel, brake line maybe.. its impossible to tell without hearing it, if you can't see/work out what it is with the wheel off then pop it back to them.. wouldn't go tearing anywhere just in case.
One other thought is that if they replaced just the bearings in the hubs then they could possibly have bent the dust shield protecting the disc itself when they removed/pressed in the new bearing, and it is rubbing but you don't hear it as you speed up.. worth a look, jack up wheel off and rotate..
