Providing the old owner still has it insured, there must be a valid insurance policy for that car, then there's the issue of tax, as soon as that registration document is signed you're responsible for the tax and you won't get that without valid insurance for the car.

My insurance company gave me a 24 hour window where it was valid for both the old and new cars so worth talking to them.
