If your not touching the rears then don't need to bleed them as long as the fluid dosen't run out in the reservior (but won't do you any harm bleeding the whole system as brake fluid is hydroscopic), just bleed the fronts starting furthest away from the master cylinder.
Fluid depends what you have in the system already, DOT4 being normal, would stick with DOT4 unless your doing track days etc then change the whole system to DOT5.1 as if has a higher boiling point.
