Default Running problem at 3000RPM

Hi guys i have what seems to be an intermittent problem with the scoob, and for me an intermittent problem is so much more annoying as i find it harder to diagnose.

Sometimes when the car is cold it struggles to run on tickover, as tho any second it is about to stool, however it never does. Then as im driving i obviously give it time to heat up, but even after a good 10 minutes of driving if i give it any gas it gets bogged down at 3000RPM, then it clears through it.

This doesnt happen all the time, and ive noticed it now the weather has dropped, is it a cold running jet problem?? me not giving it long enough to heat up?? or is it something more serious.

The car is standard apart from a full exhaust system, which i dont think has been remapped for could this be it?

Cheers for any help or advice in advance guys, or just somewhere to start first
